Fire Up the BBQ: Six Simple Recipes for the Perfect Summer Feast

There's something magical about cooking outdoors. The sound of food sizzling over the grill, the smell of smoky spices drifting through the garden and a table filled with colourful dishes waiting to be shared. BBQ season isn't just about burgers and sausages, it's about bringing people together over fresh, flavour-packed food that's simple to prepare and even better to eat.


We believe the best summer meals start with great ingredients. A handful of seasonal vegetables, quality meat or fish, and a generous drizzle of a good marinade or dressing is often all you need to create something memorable. Whether you're planning a family barbecue, entertaining friends or simply making the most of a warm evening, these six recipes are guaranteed to bring plenty of flavour to the table.


Moroccan Lamb Kebabs with Cooling Yoghurt Sauce


Tender lamb and warm Moroccan spices are made for the barbecue. Our Moroccan Style Marinade infuses the lamb with rich, aromatic flavour, while a simple yoghurt sauce brings everything together beautifully.

Moroccan Lamb Kebabs


Ingredients

For the kebabs

450g lamb kebab meat, lamb tenderloin or boneless leg of lamb, cut into 1-inch pieces

Drizzle It! Moroccan Style Marinade

1 large red onion


For the yoghurt sauce

1 cup full-fat Greek yoghurt

1 tbsp lemon juice

1 tsp olive oil

Salt and freshly ground black pepper


Method

Trim any visible fat from the lamb before placing it into a large bowl. Coat generously with Moroccan Style Marinade, cover and refrigerate for 15–30 minutes.

Heat the barbecue to a medium-high heat and lightly oil the grill.

Thread the lamb onto skewers, alternating with chunks of red onion. (If using wooden skewers, remember to soak them first.)

Cook the kebabs, turning every few minutes, until browned on all sides and cooked to your preferred doneness. Around eight minutes will give beautifully pink, medium-rare lamb.

Meanwhile, simply stir together the yoghurt, lemon juice, olive oil and seasoning.

BBQ Indian Spiced Chicken


Chicken thighs are one of the stars of any barbecue. They're juicy, full of flavour and, with our Indian Spiced Marinade, develop beautifully charred edges while staying wonderfully tender inside.

Ingredients

8 chicken thighs, skin removed

Drizzle It! Indian Spiced Marinade

2 tbsp lemon juice

Lemon wedges to serve


Method

Using a sharp knife, make three deep slashes into each chicken thigh down to the bone. This allows the marinade to really penetrate the meat and helps it cook evenly.

Generously coat the chicken with Indian Spiced Marinade and refrigerate for at least three to four hours.

Cook over a medium-high barbecue, turning regularly for around 20–25 minutes until beautifully charred and fully cooked. Alternatively, cook under a hot grill for the same amount of time.

Finish with fresh lemon wedges for a bright citrus lift.


Cajun Salmon


Not every barbecue has to revolve around meat. Salmon cooks beautifully over the grill, and our Cajun Marinade adds just enough warmth and spice without overpowering the fish's natural flavour.

Ingredients

4 salmon fillets

Method

Pat the salmon dry and allow it to come to room temperature for around ten minutes.

Coat generously with Cajun Marinade before placing skin-side down onto a hot barbecue.

Cook undisturbed for five minutes before carefully turning and cooking for a further four to five minutes until just cooked through.

Serve immediately with grilled vegetables or fresh summer salads.


Crispy Garlic Crushed Potatoes


No summer barbecue is complete without potatoes, and these crispy smashed potatoes are always one of the first dishes to disappear.

Ingredients

Baby new potatoes

Drizzle It! Mediterranean Garlic Dressing

Salt and black pepper


Method

Boil the potatoes until tender.

Warm a generous splash of Mediterranean Garlic Dressing in a large saucepan before gently tossing the potatoes to coat.

Arrange them on lined baking trays and gently squash each one using a potato masher or the bottom of a glass. The thinner you press them, the crispier they'll become.

Drizzle with a little more Garlic Dressing before baking at 200°C for 30–35 minutes until crisp and golden.

Season generously and serve with garlic mayonnaise for dipping.


Lemon & Garlic Mediterranean BBQ Vegetables


A colourful platter of grilled vegetables deserves just as much attention as whatever's cooking over the flames. Our Lemon Dressing adds brightness and zestyness, while fresh garlic and herbs create a wonderfully Mediterranean flavour.

BBQ Veggies with a lemon & garlic dressing


Ingredients

2 red peppers

2 yellow peppers

2 red onions

1 aubergine

2 courgettes

2 bunches asparagus

200g button mushrooms

Drizzle It! Lemon Dressing

3 garlic cloves, minced

Fresh parsley or chives

Salt and pepper


Method


Cut all the vegetables into generous chunks suitable for grilling.

Place everything into a large bowl, drizzle generously with Lemon Dressing, add the garlic, season well and toss until evenly coated.

Cook over a hot barbecue until tender with lightly charred edges.

As soon as the vegetables come off the grill, drizzle with a little more Lemon Dressing and toss once more. Leave to rest for ten minutes before scattering with fresh herbs.

They're delicious warm, but equally wonderful served at room temperature.


Sweet Chilli Mango Salad


Every barbecue needs something fresh and vibrant, and this colourful mango salad delivers exactly that. Sweet, crunchy and gently spicy, it's the perfect accompaniment to grilled meats and fish.

Ingredients

2 unripe mangoes

6 spring onions

1 pointed red pepper

Fresh coriander

Zest of ½ lime

Juice of 1 lime

Method


Peel the mangoes and slice into thin strips.

Combine with the spring onions, red pepper and coriander in a large bowl.

Add the lime zest, juice and a generous drizzle of Sweet Chilli Dressing before tossing everything together.

Leave the salad to stand for 10–15 minutes before serving, allowing all those fresh flavours to mingle.
